Squash Casserole

Ingredients

  • 2 lb. squash
  • 1/2 c. chopped onion
  • 1 green pepper
  • 3 c. cooked, cooled Old Fashioned rice
  • 2 well beaten eggs
  • 1 can cream of chicken soup
  • 1 can mushroom soup
  • 1/2 c. sweet milk, some cream
  • 1/2 c. mayonnaise
  • 1/2 c. grated Cheddar cheese
  • 1/4 tsp. black pepper

Directions

    Cook, cool, drain and mash squash.

    Saute onion and pepper. Mix together squash, onion, pepper, and rice.

    Then add remaining ingredients.

    Bake at 350° for 1 hour.

    When nearly done sprinkle rolled crackers and cheese on top.

    Cook until the cheese is melted.
