Ingredients
- 2 lb. squash
- 1/2 c. chopped onion
- 1 green pepper
- 3 c. cooked, cooled Old Fashioned rice
- 2 well beaten eggs
- 1 can cream of chicken soup
- 1 can mushroom soup
- 1/2 c. sweet milk, some cream
- 1/2 c. mayonnaise
- 1/2 c. grated Cheddar cheese
- 1/4 tsp. black pepper
Directions

1Cook, cool, drain and mash squash.

2Saute onion and pepper. Mix together squash, onion, pepper, and rice.

3Then add remaining ingredients.

4Bake at 350° for 1 hour.

5When nearly done sprinkle rolled crackers and cheese on top.

6Cook until the cheese is melted.
