  • 2 tablespoons unsalted butter
  • 14 cup chopped carrot
  • 12 cup chopped celery
  • 12 cup chopped onion
  • 2 12 tablespoons all-purpose flour
  • 1 (14 1/2 ounce) can plum tomatoes, crushed
  • 1 teaspoon sugar
  • 12 teaspoon dried marjoram
  • 12 teaspoon dried basil
  • 1 bay leaf
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 12 teaspoon curry powder
  • 18 teaspoon white pepper
  • 12 teaspoon paprika
  • salt

Directions

    Melt butter in a heavy bottom saucepan over medium high heat.

    Add carrots, celery, and onion and cook until tender.

    Stir in flour and cook, stirring constantly for 2 minutes.

    add canned tomatoes, sugar, marjoram, basil, bay leaf, and chicken broth.

    Simmer 30 minutes.

    Discard bay leaf.

    Puree soup in batches in a blender until smooth.

    Transfer to a double boiler and stir in heavy cream, curry powder, whit pepper, paprika, and salt.
