Squash Casserole

  • 2 lb. squash
  • 1 egg, beaten
  • 1/2 c. milk
  • 1 1/3 c. cheese, grated
  • Ritz crackers, crumbled
  • 1 clove garlic or 1/2 tsp. garlic salt
  • 2 to 3 onions

Directions

    Quarter squash and onions; cook until tender.

    Drain and mash. Add egg, milk, garlic, about 30 crumbled crackers and 1 cup cheese (reserve rest for later).

    Mix well and pour into casserole dish.

    Sprinkle top with more crumbled crackers.

    Bake at 350° for 30 minutes.

    Sprinkle casserole with remaining cheese before last 5 minutes of baking time.
