- 3 medium zucchinis (may substitute yellow squash or use combination)
- 1/2 c. chopped onion
- 2 fresh tomatoes sliced
- 1/3 c. Parmesan cheese
- 2 Tbsp. oil
- 1 lb. low-cottage cheese
- 1 tsp. basil
- 1/2 tsp. oregano
Directions

1Saute zucchini and chopped onion in oil.

2Whip cottage cheese with basil and oregano in blender.

3Place alternating layers of squash, cottage cheese and tomato in a 1 1/2 qt. casserole dish. Top with Parmesan cheese.
