  • 3 medium zucchinis (may substitute yellow squash or use combination)
  • 1/2 c. chopped onion
  • 2 fresh tomatoes sliced
  • 1/3 c. Parmesan cheese
  • 2 Tbsp. oil
  • 1 lb. low-cottage cheese
  • 1 tsp. basil
  • 1/2 tsp. oregano

Directions

    Saute zucchini and chopped onion in oil.

    Whip cottage cheese with basil and oregano in blender.

    Place alternating layers of squash, cottage cheese and tomato in a 1 1/2 qt. casserole dish. Top with Parmesan cheese.
