- 2 lb. summer squash or 2 cans squash
- 1 medium onion, chopped
- 1/2 stick margarine (for topping)
- cracker crumbs or stuffing mix
- 1 green pepper
- 1 can Cheddar cheese soup
- bacon bits
Directions

1Cook squash, onion and green pepper together.

2Stir once in a while and mash as you stir.

3Pour into a casserole.

4Spread Cheddar cheese soup over top.

5Sprinkle bacon bits on top of cheese.

6Bake in a 375° oven for 40 minutes.

7Melt margarine in a saucepan and pour in stuffing mix.

8Combine and sprinkle on top of casserole and bake 5 more minutes.
