Squash Casserole

Ingredients

  • 2 lb. summer squash or 2 cans squash
  • 1 medium onion, chopped
  • 1/2 stick margarine (for topping)
  • cracker crumbs or stuffing mix
  • 1 green pepper
  • 1 can Cheddar cheese soup
  • bacon bits

Directions

    Cook squash, onion and green pepper together.

    Stir once in a while and mash as you stir.

    Pour into a casserole.

    Spread Cheddar cheese soup over top.

    Sprinkle bacon bits on top of cheese.

    Bake in a 375° oven for 40 minutes.

    Melt margarine in a saucepan and pour in stuffing mix.

    Combine and sprinkle on top of casserole and bake 5 more minutes.
