Squash Casserole

Ingredients

  • 1 carrot, grated
  • 1 medium onion, chopped fine
  • 1 (8 oz.) sour cream
  • 1 can cream of chicken soup (undiluted)
  • black pepper as desired
  • 12 small yellow squash
  • 1 tube Ritz or other crackers, rolled fine
  • 1 stick margarine, melted

Directions

    Mix well the first 5 ingredients.

    Cook squash until tender; drain well.

    Add to top mixture.

    Stir well and put in casserole. Mix cracker crumbs and melted margarine; sprinkle on top.

    Bake at 350° for 45 minutes.
