Squash Casserole

  • 1 1/2 lb. squash
  • 1 1/2 c. bread crumbs
  • 1/3 c. grated Cheddar cheese
  • 1/4 c. minced onion
  • 2 Tbsp. minced parsley
  • 1 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 eggs, beaten
  • 2 Tbsp. butter

Directions

    Cook squash, chop in small pieces.

    Combine with bread crumbs, cheese, onion, parsley, salt, eggs and pepper.

    Put into buttered casserole.

    Dot with butter.

    Bake at 350° until brown on top. Just before end of baking, sprinkle grated cheese on top and let melt.
