Squash Casserole

Ingredients

  • 3 lb. yellow squash, cut up
  • 2 large onions, cut up
  • 3 large carrots, grated
  • Ritz crackers
  • 2 eggs, beaten
  • 1 stick margarine
  • 1 c. sharp cheese
  • salt and pepper to taste

Directions

    Cook together squash, carrots and onions until tender; drain and mash.

    Add margarine, cheese, eggs and crumbled crackers (save enough for top).

    Pour into ungreased casserole.

    Top with cracker crumbs.

    Sprinkle with a little dried parsley.

    Bake in a 350° oven for 40 minutes or until set.

    (Leave cover off.)

    Use about a 12 x 10-inch Pyrex dish.

    Keeps in refrigerator for 2 to 3 days. Freezes well.
