Squash Casserole

Ingredients
- 3 lb. yellow squash, cut up
- 2 large onions, cut up
- 3 large carrots, grated
- Ritz crackers
- 2 eggs, beaten
- 1 stick margarine
- 1 c. sharp cheese
- salt and pepper to taste
Directions

1Cook together squash, carrots and onions until tender; drain and mash.

2Add margarine, cheese, eggs and crumbled crackers (save enough for top).

3Pour into ungreased casserole.

4Top with cracker crumbs.

5Sprinkle with a little dried parsley.

6Bake in a 350° oven for 40 minutes or until set.

7(Leave cover off.)

8Use about a 12 x 10-inch Pyrex dish.

9Keeps in refrigerator for 2 to 3 days. Freezes well.
