- 1 pkg. Pepperidge Farm cornbread stuffing mix
- 1 1/2 lb. yellow squash
- 2 small onions
- 1 small jar pimentos
- 1/4 c. green peppers
- 8 oz. sour cream
- 1 can cream of mushroom soup or cream of chicken
- 1 stick margarine
- cheese of your choice (Cheddar, American, etc.; for top)
Directions

1Melt 1 stick margarine in 13 x 9-inch baking dish with half bag of stuffing mix.

2Mash down on bottom of dish.

3Cook squash and onions; add soup and rest of ingredients.

4Layer over dressing mix.

5Top with cheese and rest of dressing mix.

6Bake for 40 minutes in 350° oven.
