Squash Casserole

  • 2 lb. yellow squash
  • 1 can cream of chicken soup
  • 2 carrots, grated
  • 1 small onion, chopped
  • 1 c. sour cream
  • 1/2 pkg. seasoned bread crumbs
  • butter (oleo)

Directions

    Cook squash and onion until tender.

    Drain and mash.

    Add salt and pepper to taste.

    Add soup, carrots, onion and sour cream. Place layer of crumbs in bottom of casserole dish.

    Pour mixture over crumbs.

    Spread a layer of crumbs over top.

    Dot with butter. Bake for 30 to 35 minutes in a 350° oven.
