- 6 medium yellow squash, cooked until just tender and drained
- 1 large onion, chopped
- 8 oz. sour cream
- 2 sticks butter or margarine, melted
- 1 can cream of chicken soup
- 8 oz. stuffing mix
- 1 c. grated sharp Cheddar cheese
- salt and pepper to taste
Directions

1Melt butter and mix with stuffing mix. Set aside 1/2 cup of mix. Mix all other ingredients together; press all but the 1/2 cup of stuffing mix in the bottom of a 9 x 13-inch pan. Pour squash mixture over crust; top with remaining stuffing. Bake in preheated oven at 325° for 35 to 40 minutes. Serves 8.
