Squash Casserole

  • 2 lb. yellow squash
  • 1 green pepper
  • 1 small onion
  • 1/2 c. evaporated milk
  • salt and pepper to taste
  • 1/2 stick margarine
  • 3 c. shredded Cheddar cheese
  • 2 eggs, beaten
  • 16 saltine crackers, broken

Directions

    Cook squash, green pepper and onion in water until tender. Drain and mash.

    Add margarine and 2 cups cheese (reserving 1 cup to sprinkle on top).

    Add eggs, milk and crackers.

    Mix well; season to taste.

    Place in a shallow 2-quart greased casserole dish. Top with remaining cheese and bake, uncovered, at 350° for 30 minutes.
