- 2 lb. yellow squash
- 1 green pepper
- 1 small onion
- 1/2 c. evaporated milk
- salt and pepper to taste
- 1/2 stick margarine
- 3 c. shredded Cheddar cheese
- 2 eggs, beaten
- 16 saltine crackers, broken
Directions

1Cook squash, green pepper and onion in water until tender. Drain and mash.

2Add margarine and 2 cups cheese (reserving 1 cup to sprinkle on top).

3Add eggs, milk and crackers.

4Mix well; season to taste.

5Place in a shallow 2-quart greased casserole dish. Top with remaining cheese and bake, uncovered, at 350° for 30 minutes.
