- 2 lb. fresh or 3 boxes squash (crookneck or zucchini)
- 1 bell pepper, chopped
- 1 can green chilies
- 1 onion, chopped
- 2 eggs, slightly beaten
- 1/2 c. mayonnaise
- 1/2 c. grated Cheddar cheese (can substitute one can Cheddar cheese soup)
- salt and pepper to taste
- Parmesan cheese
Directions

1Steam squash, green bell pepper, green chilies and onion until tender (can microwave); drain well.

2Beat eggs; add to vegetables with mayonnaise, Cheddar cheese, salt and pepper.

3Mix well. Sprinkle with Parmesan cheese.

4Pour into greased casserole.

5Bake at 300° for 1 hour.

6Serves 8.
