Squash Casserole

Ingredients

  • 2 lb. fresh or 3 boxes squash (crookneck or zucchini)
  • 1 bell pepper, chopped
  • 1 can green chilies
  • 1 onion, chopped
  • 2 eggs, slightly beaten
  • 1/2 c. mayonnaise
  • 1/2 c. grated Cheddar cheese (can substitute one can Cheddar cheese soup)
  • salt and pepper to taste
  • Parmesan cheese

Directions

    Steam squash, green bell pepper, green chilies and onion until tender (can microwave); drain well.

    Beat eggs; add to vegetables with mayonnaise, Cheddar cheese, salt and pepper.

    Mix well. Sprinkle with Parmesan cheese.

    Pour into greased casserole.

    Bake at 300° for 1 hour.
