- 2 1/2 lb. summer squash (6) or medium zucchini, sliced
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 Tbsp. brown sugar
- 1 tsp. salt
- 1 small green pepper, chopped
- 1 small onion, chopped
- 3 large tomatoes, chopped or 2 c. canned tomatoes
Directions

1Add vegetables to butter along with brown sugar and salt. Cook 5 minutes.

2Place squash in greased casserole and stir in vegetable mixture.

3Cover top with bread crumbs.

4Sprinkle with grated cheese.

5Bake at 350° for 35 minutes.
