  • 2 1/2 lb. summer squash (6) or medium zucchini, sliced
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 Tbsp. brown sugar
  • 1 tsp. salt
  • 1 small green pepper, chopped
  • 1 small onion, chopped
  • 3 large tomatoes, chopped or 2 c. canned tomatoes

Directions

    Add vegetables to butter along with brown sugar and salt. Cook 5 minutes.

    Place squash in greased casserole and stir in vegetable mixture.

    Cover top with bread crumbs.

    Sprinkle with grated cheese.

    Bake at 350° for 35 minutes.
