Squash Casserole

Ingredients

  • 2 c. grated Cheddar cheese
  • 8 medium squash or 2 pkg. frozen squash
  • 1/2 c. chopped onion
  • 1 c. sour cream
  • 1 can cream of mushroom soup
  • 2 eggs
  • 1 roll Ritz crackers, crushed
  • 3/4 stick butter, melted
  • 4 oz. can mushrooms (optional)
  • 4 slices bacon, cooked and crumbled (optional)

Directions

    Wash squash, trim ends and slice.

    Cook squash and onion in salted water.

    Drain well and mash.

    Mix sour cream, cream of mushroom soup, eggs and cheese (and mushrooms and/or bacon, if desired) and pour into greased 2-quart casserole dish.

    Sprinkle with crushed Ritz crackers and pour melted butter on top.

    Bake, uncovered, at 300° for 30 minutes.

    Serves 6 to 8.
