- 3 lb. yellow squash, sliced in small pieces
- 1 1/2 c. grated carrots
- 1/2 c. chopped onion
- 1/2 c. margarine, divided
- 1/4 c. flour
- 1 c. milk
- 1/2 tsp. black pepper
- pinch of nutmeg
- 1 (8 oz.) carton sour cream
- 1 jar pimientos
- 1 pkg. stuffing herb mix
Directions

1Preheat oven to 350°.

2Steam squash, carrots and onion until tender.

3Drain in colander, mashing out water with spoon.

4Remove all excess water.

5Meanwhile, melt 1/4 cup margarine in a skillet over medium heat.

6Stir in flour and cook 1 minute.

7Then gradually add milk; stir 1 more minute.

8Add salt, pepper and nutmeg.

9Remove from heat; add sour cream and pimientos to squash mixture.

10Fold into skillet mixture.
