  • 1 lb. yellow squash
  • 1 medium onion, chopped
  • 1 c. grated Cheddar cheese
  • 1 Tbsp. sugar
  • 2 eggs, beaten
  • 2 Tbsp. melted butter
  • 1 tsp. sage
  • salt and pepper to taste
  • paprika

Directions

    Cut squash in small amounts for boiling.

    Drain thoroughly. Mix all ingredients, except 1/2 cup cheese and paprika.

    Pour into buttered casserole dish.

    Place remaining cheese on top and sprinkle with paprika.

    Bake at 350° until it bubbles and cheese on top is melted, about 20 to 25 minutes.
