Squash Casserole

Ingredients

  • 1 1/2 lb. squash
  • 1/2 cup bell pepper, chopped
  • 2 cups dry rice (equals 3 cups cooked)
  • 2 eggs beaten
  • 1 can cream of chicken soup
  • 1/4 tsp. black pepper
  • 1 tsp. salt
  • 1/2 cup chopped onion
  • 1/2 cup sweet milk
  • 1 cup grated cheddar cheese
  • 1/2 cup mayonnaise (if desired)

Directions

    Cook rice before putting in mix.

    Cook squash, drain.

    Add all ingredients except half of cheese.

    Mix.

    Bake at 350 degrees until bubbly.

    Sprinkle rest of cheese on top and return to oven until cheese melts.
