  • 6 to 8 medium squash
  • 1 (8 oz.) pkg. Velveeta cheese
  • 1 1/2 c. grated Cheddar cheese
  • 1 large onion, chopped
  • 1/2 stick butter
  • 10 crackers, crushed
  • 2 eggs
  • 1/4 c. milk
  • 2 Tbsp. bread crumbs

Directions

    Wash and slice squash; boil until tender.

    Drain and mash. Add onion, eggs and crackers; mix well.

    In a 1-quart pot, melt butter and Velveeta cheese over low heat.

    Add milk and 1 cup of grated cheese.

    Pour into squash mixture.

    Stir well.

    Pour into baking dish.

    Sprinkle with remaining cheese and bread crumbs. Bake for 50 to 60 minutes, or until golden brown.
