  • 3 c. chopped squash
  • 1 c. grated cheese
  • 1 c. chopped onions
  • 12 to 15 Ritz crackers, crushed
  • 1 Tbsp. mayonnaise
  • 2 eggs
  • salt and pepper to taste

Directions

    Cook squash and onions together.

    Mash them up real good and add eggs, then add salt and pepper.

    Cook a few more minutes, then taste.

    Pour into a bowl.

    Add cheese, crushed crackers and mayonnaise.

    Mix together, then pour into a casserole dish and bake for 15 minutes at 300°.
