Squash Casserole

Ingredients

  • 4 to 6 medium squash
  • 1 onion, chopped
  • 1 egg, slightly beaten
  • 2 Tbsp. butter
  • 1 1/2 c. shredded mild Cheddar cheese
  • 1/4 c. evaporated milk, undiluted
  • 1 large ground sausage
  • 1/2 c. grated Parmesan cheese
  • salt and pepper to taste

Directions

    Cook squash in 2 quarts of water until tender.

    Drain and set aside.

    Brown sausage and drain excess grease and set aside. Slice squash about 1/2-inch thick and place in large bowl.

    Saute onions in butter until tender.

    Place milk, egg, onions and Cheddar cheese in bowl with squash.

    Add salt and pepper.

    Mix well.

    Fold half squash into greased 2-quart casserole dish. Place sausage evenly over squash in casserole dish and spread Parmesan cheese evenly over squash.

    Bake in preheated oven at 375° for 30 minutes uncovered.

    Dish can be made without sausage, if desired.
