Squash Casserole

Ingredients

  • 5 to 6 squash
  • 1/2 stick oleo
  • 1/2 c. chopped onion
  • 1/2 c. chopped bell pepper
  • 1/2 c. water chestnuts
  • 1/2 c. shredded Cheddar cheese
  • 1/2 c. mayonnaise
  • 1 tsp. sugar
  • 1 egg, beaten
  • salt and pepper to taste

Directions

    Boil the squash until tender. Drain liquid and mash. Saute the onion, bell pepper and water chestnuts in the oleo.

    Fold in the cheese, mayonnaise, sugar, egg and salt and pepper to taste.

    Pour in casserole dish sprayed with Pam.

    Sprinkle bread crumbs on top and bake at 350° for 30 minutes.
