- 2 to 3 lb. yellow squash
- 1 medium onion, chopped small
- 2 eggs
- 1 tsp. salt
- 8 oz. Muenster cheese
- 1 Tbsp. butter or oleo
Directions

1Chop squash in 1-inch pieces (or less).

2In large skillet, melt oleo and saute onion and squash.

3Beat eggs.

4Chop cheese into small cubes (1/2-inch).

5Place squash and onion in casserole dish; mix in egg and cheese cubes.

6Bake 45 minutes at 350° until brown on top.
