- 4 or 5 c. sliced and boiled yellow squash, drained
- 3 eggs
- 1 (8 oz.) sour cream
- 3 Tbsp. flour
- 1 c. chopped onion
- 1 (12 oz.) pkg. bacon, fried, drained and crumbled
- 2 c. shredded Cheddar cheese
- 1/2 c. fine dry bread crumbs (mix in 1 Tbsp. melted butter)
Directions

1Grease a 12 x 9 x 2-inch casserole dish and layer 1/2 the squash.

2Use salt and pepper to taste.

3Separate eggs.

4Beat egg yolk until thick; stir in sour cream and flour.

5Beat egg whites until stiff.

6Fold into yolks.

7Layer this mixture over squash; add layer of onions.

8Layer remaining squash, cheese and bacon.

9Add bread crumbs on top and paprika, if desired.

10Bake in 350° oven for 20 minutes.
