Ingredients

  • 1 lb. yellow squash, cooked and drained well
  • 1 lb. zucchini squash, cooked and drained well
  • 1 can cream of chicken soup
  • 1 (8 oz.) sour cream
  • 1 small onion, chopped
  • 1 carrot, grated
  • salt and pepper to taste
  • 1 stick margarine, melted
  • 1 small box sliced Velveeta cheese

Directions

    Mix all ingredients together and add 1/2 box Stove Top stuffing (cornbread or herb).

    Put in a 2-quart buttered casserole dish.

    Add other 1/2 of stuffing mix.

    Bake at 350° about 30 minutes, until hot and bubbly.
