Squash Casserole

Ingredients

  • 2 lb. cooked squash, drained
  • 2 medium grated carrots
  • 1 medium chopped onion
  • 1 can cream of chicken soup
  • 1 small jar drained and chopped pimentos
  • 1/2 pt. sour cream
  • 1 (8 oz.) pkg. Pepperidge Farm stuffing
  • 1 stick margarine

Directions

    Melt margarine in saucepan.

    Add stuffing; mix until stuffing is coated with margarine.

    Put a thick layer of the mixture in casserole dish, saving some for the top.

    Mix thoroughly the first 6 ingredients.

    Pour on top of first layer.

    Put the rest of the stuffing mixture on top; bake at 350° for about 30 minutes, or until bubbling and brown.
