Squash Casserole

  • 1 small can green chili (liquid too)
  • 2 1/2 c. diced squash
  • 1 c. celery, cut fine
  • 1 c. onion, cut fine
  • 1 stick oleo
  • 1 1/2 c. water
  • 2 c. grated Cheddar cheese
  • 2 c. cracker crumbs
  • 1 egg, beaten
  • salt and pepper

Directions

    Boil together green chili, squash, celery, onion, oleo and water for 5 to 10 minutes.

    Add egg, cracker crumbs and 1 cup cheese.

    Place in buttered casserole dish.

    Sprinkle 1 cup cheese on top.

    Bake at 350° for
