- 4 medium yellow squash
- 1 green pepper, chopped
- 1 medium onion, sliced
- 1/2 c. water
- 1 small jar diced pimentos, drained
- 1/2 stick butter
- 3 Tbsp. flour
- 2 eggs, beaten
- 1 c. milk
- 1 c. Eagle Brand milk
- 1 c. grated cheese
- salt and pepper to taste

Directions

1Bring squash, pepper, onion and water to a boil in medium saucepan.

2Cook until slightly tender; drain.

3Add drained pimentos.

4Melt the butter in double boiler.

5Add flour and stir until well blended.

6Slowly add with squash mixture.

7Spread cracker crumbs and grated cheese on top.

8Bake at 350° for 25 minutes.
