Ingredients

  • 4 medium yellow squash
  • 1 green pepper, chopped
  • 1 medium onion, sliced
  • 1/2 c. water
  • 1 small jar diced pimentos, drained
  • 1/2 stick butter
  • 3 Tbsp. flour
  • 2 eggs, beaten
  • 1 c. milk
  • 1 c. Eagle Brand milk
  • 1 c. grated cheese
  • salt and pepper to taste
  • crackers

Directions

    Bring squash, pepper, onion and water to a boil in medium saucepan.

    Cook until slightly tender; drain.

    Add drained pimentos.

    Melt the butter in double boiler.

    Add flour and stir until well blended.

    Slowly add with squash mixture.

    Spread cracker crumbs and grated cheese on top.

    Bake at 350° for 25 minutes.
