Squash Casserole

Ingredients

  • 2 lb. yellow squash, sliced
  • 1 medium onion, chopped
  • 1 egg, beaten
  • 1 c. grated sharp cheese
  • 1/4 c. milk
  • 1/3 stick butter or margarine
  • dash of poultry seasoning (1/8 tsp.)
  • bread crumbs or stuffing mix (enough for covering top of 1 1/2-quart casserole dish)

Directions

    Cook squash and onion in small amount of salted water.
  2. 2
    Drain, mash, then add margarine. Add egg, milk and cheese to squash. Place all in 1 1/2-quart casserole. Top with crumbs or mix.

    Bake at 350° for 30 minutes or until crumbs are browned and mixture bubbly.
