Ingredients
- 1 lb. yellow squash, cooked
- salt and pepper to taste
- 2 Tbsp. sugar
- 1 egg, beaten
- 1/2 c. mayonnaise
- 1/2 c. sharp grated cheese
- 1/2 stick butter
- 1/2 c. chopped onion
- 1/2 c. chopped pecans
- 1/2 c. cracker crumbs
Directions

1Mix all ingredients except crumbs and pecans; pour in a buttered dish.

2Bake 20 minutes in a 375° oven.

3Remove from oven and top with crumbs and nuts.

4Bake an additional 10 to 15 minutes.

5May also be doubled, if so, use a 9 x 13-inch baking dish.

6You may substitute the following for low calorie:

7Egg Beaters, low fat cheese, margarine for butter, plain yogurt for mayonnaise and artificial sweetener.
