Squash Casserole

Ingredients

  • 1 lb. yellow squash, cooked
  • salt and pepper to taste
  • 2 Tbsp. sugar
  • 1 egg, beaten
  • 1/2 c. mayonnaise
  • 1/2 c. sharp grated cheese
  • 1/2 stick butter
  • 1/2 c. chopped onion
  • 1/2 c. chopped pecans
  • 1/2 c. cracker crumbs

Directions

    Mix all ingredients except crumbs and pecans; pour in a buttered dish.

    Bake 20 minutes in a 375° oven.

    Remove from oven and top with crumbs and nuts.

    Bake an additional 10 to 15 minutes.

    May also be doubled, if so, use a 9 x 13-inch baking dish.

    You may substitute the following for low calorie:

    Egg Beaters, low fat cheese, margarine for butter, plain yogurt for mayonnaise and artificial sweetener.
