Squash Casserole

Ingredients

  • 2 1/2 lb. fresh yellow squash
  • salt to taste
  • 1 medium onion, sliced
  • 3/4 stick margarine
  • 1 1/2 c. cracker crumbs or Pepperidge Farm stuffing
  • 1 1/2 c. cheese, grated
  • 1 can cream of mushroom or celery soup

Directions

    Cook squash in a little water until tender.

    Fry onion in margarine until clear.

    Drain squash and mix with onion.
  4. 4
    Add 1 cup cracker crumbs or stuffing mix, 1 cup cheese and soup. Pour into baking dish. Top with rest of crumbs and cheese.

    Bake 30 minutes at 325°.
