Ingredients

  • 4 c. cooked squash, mashed and drained (about 2 lb.)
  • 1 large onion (cooked with the squash)
  • 1/2 c. grated cheese
  • 2 Tbsp. oleo
  • 3 Tbsp. milk
  • 2 eggs, beaten
  • 2 tsp. baking powder
  • 1 1/2 Tbsp. flour
  • salt to taste

Directions

    Cut up squash and onion; cook in water until tender.

    Remove from heat, mash and drain.

    Then add all other ingredients and stir vigorously.

    Pour into a greased casserole baking dish.

    Bake at 325° for 35 to 40 minutes or until done.
