Squash Casserole

  • 2 lb. squash, sliced
  • 1/2 medium size onion, chopped
  • 1 1/2 tsp. salt
  • 1/2 c. water
  • 1 c. cracker crumbs
  • 1 egg
  • 1 can Cheddar cheese soup
  • 1/2 stick butter, cut into small pieces
  • 1/2 stick butter
  • 1 c. Shredded Wheat, crushed

Directions

    Put squash, onion, salt and water together; cook until tender. Drain.

    Put in a 1 1/2-quart baking dish.

    Add cracker crumbs, egg, cheese soup and 1/2 stick butter.

    Melt the other 1/2 stick of butter; stir in Shredded Wheat.

    Stir until well coated; sprinkle over squash mixture.

    Bake in preheated 350° oven for 30 minutes, or until bubbly and top is golden brown.
