Squash Casserole

Ingredients

  • 1 qt. sliced squash (6 to 8 medium size squash)
  • 2 medium to large onions, sliced
  • 1 chicken bouillon cube
  • 1 c. milk
  • 2 beaten eggs
  • 1 c. grated Cheddar cheese
  • 20 saltine crackers, crumbled

Directions

    Boil squash and onions with bouillon cube in lightly salted water until very tender.

    Drain.

    Mix other ingredients with drained squash/onions.

    Bake in a 1 1/2-quart or 2-quart casserole dish at 375° for 30 minutes.
