- 1 qt. squash
- 3/4 pt. sour cream
- 1 medium chopped onion
- 1/2 bell pepper, chopped
- 1 small jar pimento
- salt and pepper to taste
- 1 (10 3/4 oz.) can cream of chicken soup
- 1 stick melted margarine
- 3/4 pkg. herb stuffing mix
Directions

1Cook together squash, onion and bell pepper until soft. Drain.

2Add pimento, soup, sour cream, salt and pepper.

3Stir and mash together.

4Stir stuffing mix into melted margarine.

5Place half in the bottom of greased casserole dish.

6Place squash mixture on top of crumbs.

7Top with remaining crumbs.

8Bake at 375° until hot, bubbly and browned, approximately 20 minutes. Makes 6 to 8 servings.
