Squash Casserole

Ingredients

  • 1 qt. squash
  • 3/4 pt. sour cream
  • 1 medium chopped onion
  • 1/2 bell pepper, chopped
  • 1 small jar pimento
  • salt and pepper to taste
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1 stick melted margarine
  • 3/4 pkg. herb stuffing mix

Directions

    Cook together squash, onion and bell pepper until soft. Drain.

    Add pimento, soup, sour cream, salt and pepper.

    Stir and mash together.

    Stir stuffing mix into melted margarine.

    Place half in the bottom of greased casserole dish.

    Place squash mixture on top of crumbs.

    Top with remaining crumbs.

    Bake at 375° until hot, bubbly and browned, approximately 20 minutes. Makes 6 to 8 servings.
