  • 1 bag Pepperidge Farm stuffing
  • 12 yellow squash
  • 1 can cream of chicken soup or cream of celery soup
  • 1/2 can milk
  • 1 onion, diced
  • 1 egg
  • 1 small carton sour cream or plain yogurt
  • 1/2 stick butter or margarine

Directions

    Boil squash until tender.

    Slice the squash and cook in microwave on paper towels (high power about 3 to 4 minutes).

    Dry the squash on paper towels to get as much water out as possible. Mash squash and put into a bowl.

    Melt butter and add diced onion. Add this to the squash.

    Mix in soup, milk, egg and sour cream. Add the bag of stuffing.

    Pour into a 2-quart casserole dish. Bake at 350° until brown, 20 to 30 minutes.
