- 1/2 c. cornmeal
- 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 egg, slightly beaten
- 1/2 c. milk
- 1 tsp. minced onion
- 1 tsp. vegetable oil
- 1 c. mashed cooked squash
Directions

1Mix flour, meal, baking powder and salt in large bowl.

2Mix egg, milk, onion, oil and squash.

3Stir squash mixture into dry mixture.

4Drop by tablespoonfuls into deep, hot fat heated to 360°.

5Fry 5 to 6 fritters each time.

6Drain on paper towel. Serve hot.
