Ingredients

  • 3 c. all-purpose flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1 tsp. ground cloves
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3 eggs
  • 1 (14 oz.) pkg. frozen squash, thawed or 1 1/2 c. grated, raw yellow squash
  • 2/3 c. salad oil

Directions

    Preheat oven to 350°.

    Grease two 8 1/2 x 4 1/4-inch loaf pans well.

    In a large bowl with fork, mix the first 8 ingredients.

    In medium bowl with fork, beat eggs, squash and salad oil until blended.

    Stir into flour mixture just until flour is moistened. Pour batter into greased pans.

    Bake 1 hour or until toothpick in center comes out clean.

    Cool loaves in pans on wire racks 10 minutes.

    Remove from pans and cool completely on racks.
