- 1/4 tsp. salt
- 2 Tbsp. sugar
- 2/3 c. grated yellow squash
- 1 egg, beaten
- 3/4 c. milk
- 2 Tbsp. vegetable oil
Directions

1Combine flour, baking powder, salt, sugar, squash in large bowl.

2Make a well in center.

3Combine egg, milk and oil; add to dry mixture, stirring until moistened.

4Spoon batter into lightly greased muffin pans 2/3 full.

5Bake at 350° for 20 to 25 minutes. Freeze well.
