  • 2 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. sugar
  • 2/3 c. grated yellow squash
  • 1 egg, beaten
  • 3/4 c. milk
  • 2 Tbsp. vegetable oil

Directions

    Combine flour, baking powder, salt, sugar, squash in large bowl.

    Make a well in center.

    Combine egg, milk and oil; add to dry mixture, stirring until moistened.

    Spoon batter into lightly greased muffin pans 2/3 full.

    Bake at 350° for 20 to 25 minutes. Freeze well.
