- 2 lb. squash
- 2 eggs, slightly beaten
- 1 c. margarine, melted
- 1 c. sugar
- 3 c. flour
- 1 Tbsp. and 1 tsp. baking powder
- 1 tsp. salt
Directions

1Preheat oven to 375°.

2Measure 2 cups squash.

3Combine squash, eggs and margarine, stirring well, then combine sugar, flour, baking powder and salt

4in a mixing bowl.

5Make a well in the center and stir in the squash mixture until moistened.

6Spoon into greased muffin tins.

7Bake for 20 minutes.

8Can be frozen after baking.
