- 2 c. grated uncooked yellow squash
- 2 tsp grated onion
- 2 tsp. sugar
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. plus 2 Tbsp. all purpose flour
- 2 eggs, beaten
- 2 Tbsp. Margarine
Directions

1Combine first 5 ingredients in a medium bowl; cover and let stand.

2Drain thoroughly. (Hint:

3To drain, you will need to press down on ingredients because squash has a lot of water content.) Add flour and eggs.

4Stir well.

5Melt margarine in a large skillet over medium heat.

6Drop squash mixture by tablespoon into hot margarine.

7Cook until golden brown, turning once.

8Serves 6-8.
