- 20 c. squash
- 4 c. onions
- 6 peppers, chopped
- 3 c. vinegar
- 4 c. sugar
- 3 tsp. celery seed
- 3 tsp. mustard seed
- 3 tsp. turmeric
- 1 (3-inch) stick cinnamon
- 14 oz. pimentos
Directions

1Sprinkle 4 teaspoons salt over sliced squash and onions. Leave for 1 hour.

2Drain well.

3Bring vinegar, sugar and spices to a boil.

4Add all ingredients.

5Bring back to a boil and simmer for 20 minutes.

6Pack into hot jars and seal.
