- 8 c. squash, sliced thin
- 2 c. onion rings
- 2 large bell peppers, chopped
- 3 Tbsp. salt
- 1 large jar pimentos
- 3 c. sugar
- 2 c. apple cider vinegar
- 2 tsp. celery seed
- 2 tsp. mustard seed
Directions

1Sprinkle salt over squash, onions and peppers (chopped small). Cover with ice.

2Mix and let stand 1 hour (pick out ice or let mixture stand until ice has melted).

3Drain.

4Combine pimentos, sugar, vinegar, celery seed and mustard seed; bring to a boil. Add squash mixture to boiler and boil for 2 minutes.

5Pack in hot jars and seal.
