Ingredients

  • 4 qt. yellow squash
  • 6 onions, sliced
  • 2 green bell peppers
  • 1 red bell pepper
  • 2 cloves garlic
  • 2 c. sugar
  • 3 c. vinegar
  • 1 1/2 tsp. turmeric
  • 1 1/2 tsp. mustard seed
  • 1/2 c. salt
  • ice cubes

Directions

    Slice squash 1/2-inch thick, then add onions, peppers and garlic.

    Cover with salt and ice; mix and let stand for 3 hours. Mix remaining ingredients and pour over drained squash mixture. Heat just to boiling and put in jar and seal.
