- 8 c. squash
- 2 c. sweet pepper
- 2 c. chopped onions
- 1 c. hot pepper (optional)
- 1/4 c. plain salt
- 1 jar pimento, chopped
- 2 c. vinegar
- 3 c. sugar
- 1 tsp. celery seed
- 1 tsp. mustard seed
Directions

1Mix the first 4 ingredients and put in plain salt and water. Soak for 1 hour.

2Remove from salt water and drain well.

3Put in ice water for 1 1/2 hours, then drain well.

4Combine the remaining ingredients; pour this over the squash mixture and bring to a boil. Cook until pepper changes color.

5Pack in jars and seal.

6This is good instead of a salad and is good on hot dogs or hamburgers.
