  • 1 1/4 c. steamed and strained squash
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon, ginger and nutmeg or 1/2 tsp. lemon extract
  • 1 egg
  • 7/8 c. milk
  • 1 uncooked pie shell

Directions

    Mix sugar, salt and spices or extract.

    Add squash, egg (slightly beaten) and milk gradually. Bake in pie shell in 425° oven for 10 minutes. Decrease temperature to 350° for 30 minutes until set.
