- 1 1/4 c. steamed and strained squash
- 1/4 c. sugar
- 1/2 tsp. salt
- 1/4 tsp. cinnamon, ginger and nutmeg or 1/2 tsp. lemon extract
- 1 egg
- 7/8 c. milk
- 1 uncooked pie shell
Directions

1Mix sugar, salt and spices or extract.

2Add squash, egg (slightly beaten) and milk gradually. Bake in pie shell in 425° oven for 10 minutes. Decrease temperature to 350° for 30 minutes until set.
