  • 6 c. chopped yellow squash
  • 2 c. chopped onions
  • 1 c. chopped bell peppers (green or red)
  • 1 1/2 c. cider vinegar
  • 1 Tbsp. pickling spice
  • 1 tsp. celery seed
  • 1 tsp. turmeric
  • 2 1/2 c. sugar

    Mix first 3 ingredients well.

    Sprinkle with salt and let stand overnight.

    Next morning, drain and rinse.
