- 3 lb yellow summer squash, finely chopped
- 3 lb zucchini, finely chopped
- 6 large onions, finely chopped
- 3 medium green peppers, finely chopped
- 3 medium sweet red peppers, finely chopped
- 1/4 cup salt
- 2 cup sugar
- 2 cup packed brown sugar
- 2 cup white vinegar
- 4 tsp celery seed
- 1 tsp ground tumeric
- 1 tsp ground mustard
Directions

1In a large bowl, combine the first 6 ingredients.

2Cover and refrigerate overnight.

3Drain vegetable mixture.

4Rinse in cold water and drain again.

5Place vegetables in a Dutch oven.

6Add both sugars, vinegar, celery seed, tumeric, and mustard.

7Bring to a boil.

8Reduce heat.

9Simmer, uncovered, for 15 to 20 minutes or until liquid is clear.

10Remove from the heat.

11Cool.

12Spoon into containers.

13Cover and refrigerate for up to 3 weeks.
