- 2 medium zucchini squash
- Salt and freshly ground black pepper
- Flour
- 1 egg beaten with 1 cup milk
- Olive Oil
- 12 slices whole-wheat bread, toasted
- Mayonnaise
- 1 large onion, thinly sliced
- 6 slices ham, fried
Directions

1Slice zucchini into 1/4-inch rounds.

2Let stand until moisture forms on sides.

3Salt and pepper both sides.

4Dip in flour, then egg/milk mixture, then in flour again.

5In a deep frying pan or pot, heat about 2 inches of oil over medium heat.

6Fry squash until lightly browned on both sides.

7Drain well on paper towels.

8Spread toast with mayonnaise and make sandwiches with squash, onions and ham.
