- 4 lb. yellow squash
- 1 large onion
- 1/2 lb. butter
- 1 c. evaporated milk
- 3/4 lb. Cheddar cheese
- 18 saltines
- 1/4 tsp. oregano
- 1/4 tsp. curry
- 1/2 tsp. Beau Monde
- 1 tsp. sugar
- salt and pepper to taste
- 4 well-beaten eggs
Directions

1Cook squash and onion until tender in salted water.

2Mash and add all other ingredients except 4 crackers and small amount of butter.

3Put 4 crackers, broken into crumbs and buttered, on top. Add paprika, Parmesan cheese and fresh parsley on top.

4Bake at 350° for 30 minutes.
